Roasted Kohlrabi Wedges
Serves 4 as a side dish
6 kohlrabi, cut into 1-inch wedges
2 T avocado oil (or comparable high heat oil)
1 t of garlic powder
3 T parmesan
1 T parsley, chopped
A sprinkle of salt and pepper
A pinch of cayenne
Preheat oven to 400 F. Peel the kohlrabi and cut into 1-inch wedges. Toss in a high heat oil like avocado oil, garlic powder, salt, pepper, and cayenne until evenly coated.
Put wedges in non-stick bake pan and into the oven. Toss wedges about every 10 minutes until tender and golden brown. Should take around 45-60 minutes to roast. They are ready to remove from the oven when they are tender enough to a poke a fork all the way through, test a few wedges for doneness.
When done, toss with about 3 T of Parmesan and 1 T of chopped parsley. Enjoy!
